  • ¾ cup (6 oz/170 g) plus ¼ cup (2 oz/57 g) granulated sugar
  • 1 large egg, at room temperature
  • ½ teaspoon vanilla extract
  • 1 cup (8 oz/225 g) block cream cheese, at room temperature
  • 1 ⅓ cups (5 ⅓ oz/152 g) powdered sugar, sifted
  • ½ teaspoon vanilla extract
  • ¼ cup (2 fl oz/60 ml) heavy whipping cream
  • 2½ cups (12 ½ oz/350 g) mixed fresh berries


Instructions

  1. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  2. In a stand mixer bowl fitted with a paddle attachment, cream the butter and ¾ cup of granulated sugar on medium-high speed for about 3 minutes until light and fluffy.
  3. Reduce speed and add the egg and vanilla extract, mixing until well combined.
  4. Mix in the dry ingredients until the dough forms a cohesive ball.
  5. Shape the dough into a flattened disc, wrap it tightly, and chill in the refrigerator for 30 minutes.
  6. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  7. Roll out the chilled dough on a floured surface into a 10-inch circle and place it on the prepared baking sheet.
  8. Sprinkle the remaining ¼ cup of sugar over the dough and bake for 14-16 minutes until puffed and pale golden. Allow to cool completely for about 30 minutes.
  9. In a medium bowl, whisk the cream cheese, powdered sugar, and vanilla extract until smooth.
  10. Gradually add in the heavy cream, whisking until thickened. Spread this mixture over the cooled sugar cookie crust, leaving a small border around the edge.
  11. Arrange the fresh mixed berries on top of the cream cheese filling, alternating colors for visual appeal.
  12. For best flavor and texture, serve the fruit pizza on the same day it’s assembled, and refrigerate until serving. Store any leftovers in an airtight container in the refrigerator for up to 2 days.
