Instructions
- Preheat the oven to 375°F and prepare a 9×13-inch baking pan with cooking spray and parchment paper.
- In a food processor, combine flour, sugar, baking powder, salt, and lemon zest, pulsing to mix.
- Add cold butter pieces to the flour mixture and pulse until it resembles coarse meal with some pea-sized butter pieces.
- Whisk together egg and vanilla in a small bowl, then stream into the food processor, letting it run briefly until combined into a crumbly dough.
- Press just over half of the dough mixture into the bottom of the prepared pan and bake for 10 minutes until golden around the edges.
- In a bowl, combine blueberries, sugar, and cornstarch, then evenly spread over the baked crust.
- Crumble the remaining dough over the blueberries, squeezing it for larger crumbs.
- Bake for 35-40 minutes until the top is golden and bubbly; let cool completely before cutting into squares.
Notes
For optimal flavor, use fresh lemons for the zest.
You can substitute frozen blueberries if fresh ones are unavailable, no adjustments needed.
These bars can be stored in an airtight container at room temperature for several days.
