- ½ cup butter
- 20 oz mini marshmallows
- 9 oz box rice crispy cereal
- 2 tsp vanilla
- ½ tsp salt
- red and orange food coloring
- 1 cup green candy melts
- 1 cup orange candy melts
- orange sprinkles
Instructions
- Line a 9×13 pan with parchment paper.
- Melt the butter in a large pot over medium-low heat. Add 1 1/2 bags of mini marshmallows to the pot and reserve the remaining marshmallows for later.
- Stir the butter and marshmallows continuously with a rubber spatula until fully melted, keeping the heat low.
- Remove the pot from heat and stir in vanilla, salt, and food coloring until you achieve your desired color, using minimal food coloring to avoid flavor alteration.
- Incorporate roughly half of the rice krispy cereal into the melted marshmallow mixture, ensuring to scrape the bottom thoroughly.
- Add the remaining marshmallows and the rest of the rice cereal to the pot and mix well.
- Pour the mixture into the prepared pan and spread evenly.
- Allow the rice krispies to cool for 10-15 minutes.
- Slide the treat onto a cutting board using the parchment paper.
- Cut the treat into 8 equal sections by first halving it lengthwise and then making three width-wise cuts.
- Cut each rectangle into triangle shapes by slicing diagonally from corner to corner.
- Melt the green candy melts in a microwave safe bowl in 30-second increments, stirring in between until melted.
- Transfer the melted candy melts into a zipper top bag, cutting off a corner to pipe outlines.
- On a parchment-lined baking sheet, pipe out 12 v-shaped stems and refrigerate for 10 minutes to harden.
- Flip the rice krispie treats onto parchment paper, then cut each half into six equal triangle pieces to resemble carrots.
- Melt the orange candy melts in a microwave safe bowl using the same 30-second method.
- Drizzle the melted orange candy over the carrot shapes, then sprinkle immediately with orange sprinkles.
- Add a dot of orange candy melt at the top of each carrot and gently press the green candy stems into place.
- Let the decorated rice krispie carrots sit for a few minutes before serving.
Notes
Ensure the butter melts on low heat to prevent burning.
Adjust food coloring based on your desired shade for the carrots.
Keep the decorated treats in a cool place to preserve shape.
