Ingredients

- 250 g unsalted butter (room temp)
- 150 g icing sugar (plus extra for dusting)
- zest of 2 lemons (finely grated)
- 2 egg yolks
- 350 g plain flour
- 100-200 g lemon curd
Instructions
- Beat the butter and icing sugar together until combined.
- Mix in the lemon zest, plain flour, and egg yolks until well incorporated.
- Shape the dough into a flattened ball, wrap it, and refrigerate for at least one hour.
- Preheat the oven to 160ÂșC fan and line two to four large baking trays with parchment paper.
- Roll out the chilled dough to about 1/2 cm thickness and cut out circles for the biscuits.
- Use a bunny-shaped cutter, or any desired shape, for the biscuits.
- Cut out a mini heart or bunny from half of the biscuits.
- Re-roll the remaining dough until fully utilized, cutting out more biscuits as needed.
- Transfer the biscuits to the baking trays and bake for 12-14 minutes.
- Allow the biscuits to cool on the trays.
- Once cooled, spoon a larger teaspoon of lemon curd into the center of the solid biscuits, spreading it slightly inward.
- Press another biscuit on top to create a sandwich and dust with optional icing sugar.
Notes
Chill the dough long enough to ensure it holds shape while baking.
Feel free to use different shapes for the biscuits to suit any occasion.
The lemon curd can be adjusted based on personal tartness preference.
