  • 1 1/4 cups almond flour
  • 3/4 cup finely shredded mozzarella cheese
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter (soft but not melted)
  • 3 large eggs
  • 2 tablespoons salted butter (melted)


Instructions

  1. Preheat your oven to 400ºF and grease a muffin pan with butter.
  2. In a bowl, combine almond flour, mozzarella cheese, baking powder, and salt.
  3. Add the softened butter to the mixture and use your fingertips to create a crumbly texture.
  4. Mix in the eggs vigorously with a fork until you achieve a lumpy dough.
  5. Scoop about two tablespoons of the batter into each muffin tin.
  6. Bake for 10-15 minutes until golden brown.
  7. Brush melted butter on the tops of the biscuits and serve warm.
