- 4 oz baker’s german chocolate chopped
- ½ cup water boiling
- 1 cup unsalted butter softened
- 2 cups granulated sugar
- 4 large eggs separated
- 1 teaspoon vanilla extract
- ½ teaspoon kosher salt

- 2½ cups cake flour
- 1 cup buttermilk reduced fat
- 12 oz evaporated milk
- 1½ cups granulated sugar
- 3 large egg yolks
- ¾ cup unsalted butter
- 1½ teaspoons vanilla extract
- 1½ cups unsweetened shredded coconut
- 1¼ cups chopped pecans
- 4 ounces baker’s german’s chocolate
- ¼ cup heavy cream
- 2 tablespoons unsalted butter softened
Instructions
- Preheat the oven to 325°F convection or 350°F conventional. Prepare three 9-inch round cake pans with nonstick spray and parchment paper.
- In a small bowl, mix 4 oz chopped Baker’s German chocolate with ½ cup boiling water until smooth, then let it cool completely.
- Sift together 2½ cups cake flour, ½ teaspoon salt, and 1 teaspoon baking soda in a medium bowl.
- Whip 4 egg whites in a clean bowl to stiff peaks, then set aside.
- In a stand mixer fitted with a paddle attachment, cream 1 cup softened butter with 2 cups sugar on medium speed until light and fluffy for 3–4 minutes.
- Add the 4 egg yolks one at a time while beating well after each addition. Mix in 1 teaspoon vanilla extract with the final yolk and scrape the bowl.
- With the mixer on low speed, alternate adding the flour mixture and 1 cup buttermilk in three additions, starting and ending with the flour.
- Combine the cooled chocolate mixture until fully mixed in.
- If needed, rewhisk the egg whites then gently fold them into the batter until no streaks remain.
- Evenly divide the batter between the prepared pans. Bake for 25–28 minutes or until the center springs back lightly and a toothpick comes out clean.
- Cool the cakes in their pans for 10 minutes, then transfer to wire racks to cool completely.
