Instructions
- Whisk together flour, cinnamon, baking soda, and salt in a medium bowl. Stir in oats and set aside.
- In a large bowl, blend softened butter, brown sugar, and sugar until creamy. Add egg and vanilla, mixing fully, and scrape the bowl sides as needed.
- Incorporate the dry ingredients with the wet mixture until combined, then fold in the raisins.
- Cover the dough and chill in the refrigerator for 30 minutes.
- Preheat oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- Scoop 1 1/2 tablespoons of dough onto the baking sheet, ensuring space for spreading.
- Bake cookies for 10-12 minutes.
- Let cookies cool for 5 minutes on the baking sheet before transferring to a wire rack.
Notes
Chilling the dough helps prevent the cookies from spreading too much.
Feel free to add nuts or chocolate chips for a variation.
