  • 2 cups (248g) all-purpose flour
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • 1 cup (226g) unsalted butter, melted
  • 1 ½ cups (300g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (237ml) buttermilk
  • 1 cup (225g) rainbow sprinkles
  • 1 cup (226g) unsalted butter, softened
  • 4 cups (452g) powdered sugar
  • 1 teaspoon (15 ml) vanilla extract
  • ½ teaspoon salt
  • 2-5 tablespoons (30-75ml) heavy whipping cream
  • ½ cup (112g) sprinkles plus more for topping


Instructions

  1. Preheat the oven to 350°F and grease a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
  3. In a large bowl, beat the melted butter and granulated sugar with a mixer on medium speed until smooth.
  4. Add the eggs one at a time, then mix in the vanilla extract.
  5. Gradually mix the buttermilk into the dry ingredients, starting and ending with the buttermilk, mixing just until combined. Scrape the bowl as needed. Stir in the rainbow sprinkles.
  6. Pour the batter into the prepared baking pan and bake for 30-40 minutes or until a toothpick comes out clean. Allow to cool completely before frosting.
  7. For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, mixing until a crumbly mixture forms.
  8. Mix in the vanilla extract and salt, then add heavy cream until you reach your desired consistency. Stir in more sprinkles as desired.
  9. Frost the cake with the prepared frosting and add extra sprinkles on top. Store until serving.

Notes

For a lighter texture, ensure all ingredients are at room temperature before mixing.
The cake can also be made into 24 cupcakes or two 9-inch rounds if preferred.
Store any leftovers in a loosely covered container for up to 2 days.
