- 1 cup walnuts, chopped

Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate mixing bowl, beat the butter, brown sugar, and granulated sugar until creamy.
- Add the egg and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the grated carrots, chopped walnuts, and raisins.
- Scoop tablespoons of cookie dough onto a baking sheet lined with parchment paper, spacing them evenly.
- Bake for about 12-15 minutes or until lightly golden around the edges.
- Allow to cool before serving.
Notes
For extra flavor, consider adding crushed pineapple to the dough.
Store cookies in an airtight container at room temperature for up to a week.
