  • ¾ cup (247g) maple syrup, reduced to 1/2 cup or a little less (about 140-150g)
  • 1 ½ cups (297g) granulated sugar
  • ¾ cup (161g) brown sugar
  • ½ cup (113g) unsalted butter
  • ⅔ cup (160g) evaporated milk
  • 2 tbsp (40g) corn syrup
  • 12 oz (340g) white chocolate chips
  • 7 oz marshmallow creme
  • ½ tsp salt
  • 1 ½ cups (about 155g) whole walnuts, toasted


Instructions

  1. Toast the walnuts: preheat the oven to 350ºF. Spread walnuts on a baking sheet and toast for 7 to 10 minutes, stirring occasionally until fragrant and lightly browned. Transfer to a plate to cool and chop into 1 cup and ½ cup portions, or use raw walnuts if preferred.
  2. Line an 8×8 or 9×9 inch square pan with aluminum foil, leaving some overhang for easy removal later. Set aside.
  3. In a small saucepan over medium heat, bring the maple syrup to a boil. Once boiling, reduce heat to low and let it simmer for 15 to 20 minutes until reduced to about ½ cup. Check the volume using a measuring cup. Set aside to cool.
  4. In a medium saucepan, combine granulated sugar, brown sugar, butter, evaporated milk, corn syrup, and the reduced maple syrup. Stir constantly until the sugar melts, then occasionally until it reaches a full boil.
  5. Let the mixture boil without stirring for 4 to 8 minutes, or when an instant-read thermometer reads 236 to 238ºF. Ensure the thermometer does not touch the bottom of the pan.
  6. Remove from heat, then stir in white chocolate chips, marshmallow creme, and salt until smooth and fully melted.
  7. Add 1 cup of toasted walnuts, mixing until evenly distributed in the fudge.
  8. Pour the mixture into the prepared pan, sprinkling the remaining ½ cup of walnuts on top.
  9. Allow the fudge to cool and set for 6 to 8 hours, or overnight for easier cutting.

Notes

Ensure to monitor the maple syrup as it reduces to prevent overflow during cooking.
For a more intense flavor, allow the fudge to set overnight before cutting into pieces.
