  • 2/3 cup (140 grams) granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (152 grams) all-purpose flour
  • 8 grams (2 tablespoons) very high quality bright green matcha powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, stir together the melted butter, sugar, egg yolks, and vanilla extract until well combined.
  3. Sprinkle the all-purpose flour, matcha powder, baking soda, and salt over the dough, and stir gently just to combine.
  4. Press the dough down flat in the bowl, then divide it in half to form two portions for 6 cookies each.
  5. Shape each portion into dough balls, roll them lightly in granulated sugar, and space them evenly on the prepared baking sheet.
  6. Bake the cookies for about 10-11 minutes, or until they spread, crackle, and look dry on top. Allow them to rest for 2 minutes on the baking sheet before transferring to a wire rack to cool.
