- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1 1/4 cups (152 grams) all-purpose flour
- 8 grams (2 tablespoons) very high quality bright green matcha powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, stir together the melted butter, sugar, egg yolks, and vanilla extract until well combined.
- Sprinkle the all-purpose flour, matcha powder, baking soda, and salt over the dough, and stir gently just to combine.
- Press the dough down flat in the bowl, then divide it in half to form two portions for 6 cookies each.
- Shape each portion into dough balls, roll them lightly in granulated sugar, and space them evenly on the prepared baking sheet.
- Bake the cookies for about 10-11 minutes, or until they spread, crackle, and look dry on top. Allow them to rest for 2 minutes on the baking sheet before transferring to a wire rack to cool.
Notes
For best results, use high-quality matcha powder to enhance the flavor and color.
If you want a sweeter cookie, feel free to add more sugar to taste.
