  • 1 loaf italian bread, sliced lengthwise
  • ½ cup (1 stick / 113 g) unsalted butter, softened
  • 1 teaspoon garlic salt
  • 1 pound (31 to 35 per pound) medium shrimp, peeled, deveined, tails removed
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 1 small yellow onion, diced (about ½ cup)
  • 2 teaspoons garlic, minced
  • 2 cups (476 g) heavy whipping cream
  • 2 cups (200 g) parmesan cheese, finely grated
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes
  • 1 cup (113 g) mozzarella cheese, shredded
  • 1 cup (113 g) white cheddar cheese, shredded
  • Fresh parsley, chopped, for garnish


Instructions

  1. Preheat the oven to 400°F and prepare a large baking sheet with parchment paper.
  2. Mix softened unsalted butter and garlic salt together until well combined and spread this mixture on the sliced side of the italian bread.
  3. Place the prepared bread on the baking sheet and bake for about 10-15 minutes, or until golden brown.
  4. In a skillet, heat the olive oil and 2 tablespoons of unsalted butter over medium heat.
  5. Add the diced onion and cook until translucent. Then, add the minced garlic and cook for an additional minute.
  6. Stir in the shrimp, kosher salt, black pepper, and red pepper flakes, cooking until the shrimp turn pink, approximately 3-4 minutes.
  7. Pour in the heavy whipping cream, and bring to a simmer before incorporating the parmesan cheese until it's fully melted and creamy.
  8. Remove from heat and stir in the shredded mozzarella and white cheddar cheese until well mixed.
  9. Spread the shrimp alfredo mixture over the toasted bread and garnish with chopped parsley before serving.
