  • 1 cup (two sticks) unsalted butter, softened
  • 1 cup packed brown sugar (light or dark)
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 tsp salt
  • 1 tsp baking powder
  • 3 1/2 cups all-purpose flour
  • 1 cup mini semi-sweet chocolate chips


Instructions

  1. Preheat the oven to 375 degrees F.
  2. In a mixer, cream the softened butter with brown and granulated sugars until fluffy.
  3. Add in the eggs, salt, vanilla extract, and baking powder, mixing until well combined.
  4. Gradually add the flour, one cup at a time, adjusting with up to 1/4 cup extra until the dough is non-greasy.
  5. Fold in the mini semi-sweet chocolate chips gently.
  6. Roll out the dough to 1/4 inch thickness between two sheets of parchment paper and chill for 30 minutes.
  7. Cut the rolled dough into shapes, place them on a lined baking sheet, and chill again.
  8. Bake for 7-9 minutes, removing them from the oven before the edges turn brown.
  9. Let cool on the sheet for 10 minutes before transferring to a rack.

Notes

For a softer cookie, do not bake beyond 9 minutes.
Chilling the dough helps prevent excessive spreading during baking.
