Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar or brown sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon ground cinnamon
  • 2 large eggs separated
  • 2 cups buttermilk
  • 6 tablespoons salted butter melted
  • 2 teaspoons vanilla extract


Instructions

  1. In a large bowl, mix the flour, sugar, baking powder, and cinnamon together.
  2. In another bowl, beat the egg yolks and then whisk in buttermilk, melted butter, and vanilla extract.
  3. In a separate bowl, beat the egg whites until stiff peaks form.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the egg whites until no lumps remain.
  6. Preheat the waffle iron and pour enough batter to cover the surface without overflowing.
  7. Cook according to the manufacturer's instructions until golden brown. Repeat with remaining batter.

Notes

For extra crunch, add some chopped nuts or fruit into the batter.
Serve waffles with maple syrup or fresh fruit for added flavor.
Leftover waffles can be stored in the freezer and reheated in a toaster.
