Ingredients

  • 1 and ⅓ cup (107g) old fashioned oats
  • ½ cup (52g) ground flaxseed
  • ¼ cup (60g) mini chocolate chips
  • 2 Tablespoons (20g) chia seeds or hemp hearts
  • ¼ teaspoon salt
  • ½ cup (128g) preferred nut or seed butter
  • ⅓ cup (113g) honey
  • 1 teaspoon vanilla extract


Instructions

  1. Line a small baking sheet or plate with parchment, foil, or a silicone baking mat and set aside.
  2. In a medium bowl, combine old fashioned oats, ground flaxseed, mini chocolate chips, chia seeds or hemp hearts, and salt. Whisk until well mixed.
  3. Add nut or seed butter, honey, and vanilla extract, stirring until fully combined. Cover and chill for at least 30 minutes to 2 days.
  4. Using a cookie scoop, roll the mixture into 1-inch balls and place them on the prepared sheet. Refrigerate until set for about 15 minutes.
  5. Store bites in an airtight container in the refrigerator for up to 2 weeks. They can also be frozen for up to 3 months.
