  • 1/2 cup warm water
  • 1 envelope instant yeast
  • 4 1/2 cups all-purpose flour, plus more if needed
  • 4 large eggs
  • 1 1/4 cups sugar, divided
  • 2 teaspoons coarse salt
  • 1 stick unsalted butter, at room temperature
  • 1/2 stick unsalted butter, melted, and more for dish
  • 2 tablespoons ground cinnamon
  • 1 cup powdered sugar
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons whole milk
  • 1 teaspoon vanilla extract


Instructions

  1. Combine warm water, yeast, and 1/2 cup flour in a stand mixer bowl to form a thick paste. Stir in eggs, 1/4 cup sugar, and salt until mixed.
  2. Fit the mixer with a dough hook and add 4 cups flour. Knead on medium speed for 4 to 5 minutes until smooth.
  3. Incorporate the stick of room temperature butter and knead for about 10 minutes until the dough is smooth and elastic. Add more flour if the dough is too sticky.
  4. Turn the dough onto a clean surface and knead by hand for 3 minutes. Place in a bowl, cover, and let rise until doubled for 1 1/2 to 2 hours. Punch down the dough to release air bubbles.
  5. Lightly butter a 9-inch pie plate and mix the remaining 1 cup sugar with cinnamon in a small bowl.
  6. Roll the dough into 1-inch balls, dip in melted butter, roll in cinnamon sugar, and stack in the pie plate. Cover with plastic wrap and let rise for about 1 hour.
  7. Preheat the oven to 350°F. Bake the balls until golden and firm, for 50 to 55 minutes.
  8. For the glaze, whisk together the powdered sugar, salt, melted butter, milk, and vanilla until smooth.
  9. Let the bites cool for 15 minutes before drizzling with glaze. Serve warm.

Notes

Ensure water is warm, not hot, to activate the yeast properly.
You can substitute whole milk with almond milk for a dairy-free version.
These bites are best served warm and fresh out of the oven.
