Instructions
- Begin by beating the softened butter and granulated sugar together for 2 minutes using an electric mixer, occasionally scraping down the sides.
- Mix in the vanilla extract and eggs until thoroughly combined.
- Add the all-purpose flour, baking powder, and kosher salt, mixing until well blended.
- Preheat the oven to 350°F and line a 15x10x1 baking sheet with parchment paper.
- Using floured hands, drop the cookie dough onto the prepared baking sheet and press it out evenly with your hands.
- Bake for 15-18 minutes, or until the edges of the cookie bars start to brown, then remove from the oven and allow to cool completely.
- To prepare the frosting, beat together the second portion of softened butter and pure vanilla extract on high for 2 minutes until fluffy.
- Gradually add the kosher salt, powdered sugar, and milk, continuing to beat for 3-5 minutes until the mixture is fluffy and well blended.
- If using, add the drop of blue food coloring and mix until combined.
- Spread the frosting over the cooled cookie bars and top with sprinkles if desired. Cut into squares and enjoy!
Notes
Using gel food coloring can give a more vibrant color to your frosting.
For easier handling, make sure to keep your hands floured while pressing the cookie dough into the pan.
These bars can be stored in an airtight container at room temperature for up to a week.
