  • 1/2 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 1/2 cup Sour cream (room temperature or greek yogurt)
  • 2 Large eggs (room temperature)
  • 1 Egg yolk (room temperature)
  • 1/4 cup Rainbow jimmie sprinkles
  • 1 3/4 cup All-purpose flour
  • 1 TBSP Cornstarch
  • 1 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1/2 tsp Salt
  • 1/2 cup Oil (canola or vegetable)
  • 1 cup White granulated sugar
  • 1 TBSP Pure vanilla extract
  • 1/4 cup Sour cream (room temperature or greek yogurt)
  • 2 Large eggs (room temperature)
  • 1/2 cup Buttermilk (room temperature)
  • 1/3 cup Rainbow jimmie sprinkles
  • 2 oz Cream cheese (room temperature)
  • 1 TBSP Heavy cream
  • 1 cup Heavy cream
  • 1/4 cup Powdered sugar
  • 1 tsp Pure vanilla extract


Instructions

  1. Preheat the oven to 325℉ and prepare a 9-inch springform pan with nonstick spray and parchment paper.
  2. In a mixer, beat cream cheese and sugar for 2 minutes; scrape the bowl.
  3. Incorporate vanilla and sour cream, then mix until combined. Add eggs and yolk, mixing on low until just combined.
  4. Fold in the batter with a rubber spatula and add sprinkles.
  5. Sift flour, cornstarch, baking powder, baking soda, and salt in a separate bowl.
  6. Beat butter, oil, and sugar until pale and fluffy, about 2 minutes.
  7. Mix in vanilla, sour cream, and eggs until smooth. Scrape the bowl as necessary.
  8. Combine dry ingredients and buttermilk into the batter and mix. Fold in sprinkles.
  9. Spread cake batter in the prepared pan, followed by cheesecake batter. Ensure even spreading.
  10. Bake for 55-65 minutes, until the center jiggles slightly; let cool completely in the pan on a cooling rack.
  11. Cover and chill in the fridge for at least 6 hours or overnight.
  12. For the whipped cream, beat cream cheese and heavy cream until creamy.
  13. In a separate bowl, beat heavy cream, powdered sugar, and vanilla until thick, then add cream cheese mixture until stiff peaks form.
  14. Remove the cake from the pan, top with whipped cream and additional sprinkles.

Notes

Make sure all ingredients are at room temperature for the best mixing results.
Chilling the cake overnight enhances the flavors and texture.
You can adjust the amount of sprinkles based on preference.
