  • 4 oz full fat cream cheese, softened
  • 1/4 cup (56g) unsalted butter, softened
  • Pinch of kosher salt
  • 1 cup (110g) powdered sugar, spooned and leveled
  • 1/4 cup (56g) unsalted butter, melted
  • 1/4 cup (56g) vegetable oil
  • 3/4 cup (150g) packed light brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 tbsp unsulphured molasses
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 cup (100g) quick oats
  • 1/2 cup (120g) whole milk
  • 1 1/2 cups (192g) all-purpose flour or 1-to-1 gluten-free baking flour, spooned and leveled


Instructions

  1. Melt the white chocolate chips in the microwave in 30-second intervals until smooth, ensuring not to overheat.
  2. In a medium bowl, mash together the cream cheese, butter, and salt until combined. Blend in the powdered sugar until smooth, then add the melted white chocolate.
  3. Prepare a 9” springform pan by lining the bottom with parchment paper. Spread the filling evenly into the pan, leaving a ¼” border. Freeze the base for a firmer texture.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week.
These bars can be frozen for up to 3 months; just thaw them in the refrigerator before serving.
