- 1 package (8 ounces) cream cheese, (softened)
- 3 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1 pinch kosher salt
- ½ teaspoon lemon zest, (optional, but recommended)
- 2 cups (332 g) fresh strawberries, (sliced)
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 1 large egg, (room temperature)
- 1 tablespoon water
- Confectioners’ sugar, (for dusting)
- Strawberry Jam or Jelly, (for brushing)
Instructions
- Preheat your oven to 400°F and line two baking sheets with parchment paper.
- On a floured surface, roll out the thawed puff pastry sheets and cut each into 6 rectangles, totaling 12 pieces.
- Arrange these rectangles on the baking sheets, ensuring they are spaced about 1 inch apart.
- With a fork, poke holes in the centers of each rectangle, being careful not to touch the edges.
- In a bowl, mix the softened cream cheese, 3 tablespoons granulated sugar, vanilla extract, and kosher salt until smooth. If desired, add lemon zest and mix well.
- In another bowl, combine the sliced strawberries with 2 tablespoons of sugar and cornstarch, allowing them to sit for 5 minutes and drain excess liquid if needed.
- Spread about 1 tablespoon of the cream cheese mixture on each pastry's center, then layer with the prepared strawberries.
- In a separate small bowl, whisk together the egg and water. Brush this mixture along the edges of each pastry for a golden finish.
- Bake the pastries for 15 to 18 minutes, or until they are puffed and golden brown.
- Once baked, remove them from the oven and cool slightly.
- For an extra touch, dust with confectioners' sugar before serving and brush warmed strawberry jam over the strawberries for shine.
