Instructions
- Melt the butter in the microwave for 30 seconds and set aside.
- In a medium bowl, mix together flour, sugar, salt, and baking powder.
- Stir milk and egg together in a separate bowl.
- Create a well in the center of the dry ingredients.
- Pour the melted butter, vanilla, and milk mixture into the well.
- Use a wire whisk to mix until just combined; the batter should be slightly thick and lumpy.
- Allow the batter to rest while heating a lightly oiled skillet or griddle over medium-high heat.
- Pour or scoop about 1/4 cup of batter onto the griddle for each pancake.
- Cook each side for 3-6 minutes until they are lightly golden brown.
Notes
For extra flavor, you can add chocolate chips or blueberries to the batter.
Ensure the skillet is hot enough before adding the batter for nice golden pancakes.
