- 2 1/2 cups graham cracker crumbs
- 12 tbsp unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup confectioners’ sugar
- 4 cups heavy whipping cream
- 2 tsp vanilla extract, divided
- 6 tbsp granulated sugar
- 1 (21 oz) can strawberry pie filling
- 1 (21 oz) can blueberry pie filling
Instructions
- In a bowl, mix the graham cracker crumbs and melted butter until crumbs are moistened. Reserve 3 tablespoons of crumbs for topping.
- Press the remaining crumbs into the bottom of a 9×13-inch pan sprayed with non-stick spray.
- Using an electric mixer, beat together the softened cream cheese, confectioners’ sugar, and 1 tsp vanilla until smooth.
- In another bowl, whip heavy cream, granulated sugar, and remaining 1 tsp vanilla until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until combined.
- Spread 1/3 of the cream mixture (about 3 cups) over the crust.
- Add spoonfuls of strawberry pie filling over the cream layer, spreading gently.
- Spread another 1/3 of the cream mixture evenly over the strawberry layer.
- Top with spoonfuls of blueberry pie filling and spread gently.
- Cover with the remaining 1/3 of the cream mixture and sprinkle with reserved crumbs.
- Cover and refrigerate overnight to let layers set.
Notes
This dessert is best prepared a day in advance to allow flavors to meld and layers to set.
Feel free to substitute other berry fillings according to your preference.
For added flavor, consider mixing fresh berries into the cream mixture.
